St Patrick's Day Sugar Cookies + Fruity Pebbles Buttcream

A green and delicious sugar cookie perfect for celebrating St. Patrick's Day! These cookies are frosted with an incredible Fruity Pebbles buttercream and fun, colorful Lucky Charms cereal!

-Add green food coloring at the same time you're adding sour cream

Ingredients
  

  • 1 C Room temperature unsalted butter
  • 1 T Vanilla Extract
  • 3/4 C Fruity Pebbles cereal, crushed
  • 1/4 C Heavy Cream
  • 4-6 C Powdered Sugar

For Buttercream

  • Using a food processor or blender, crush the Fruity Pebbles cereal. Set aside.
  • Put sticks of butter in electric mixer and mix until butter is fluffy and light.
  • Add in cream, Fruity Pebbles, and vanilla. Mix on low until well combined, making sure to scrape the sides of the bowls.
  • Mix in 1 cup of powdered sugar at a time until well combined. Turn mixer on high for 2 minutes to get the buttercream nice and fluffy.
  • Frost cooled cookies and top with Lucky Charms cereal!
